Easy and Healthy Banana Muffin Recipe For the Whole Family
Welcome to my kitchen! Today, we're whipping up a batch of delicious and healthy Muffins. Packed with nutritious ingredients and lots flavor, these muffins are perfect for breakfast, snacks, or anytime throughout the day. My daughter loves them as a snack mid-day! Plus, they're super easy to make, even for beginners in the kitchen.
Ingredients:
- 1 ripe banana
- 1 & 1/3 cup organic oats (grinded into a “flour”)
- 2 Tablespoons plain Greek yogurt
- 1 whole egg
- 1 teaspoon baking powder
- 2 TBSP coconut oil or extra virgin olive oil
- Optional add-ins: nuts, seeds, chocolate chips, fruit
Instructions:

Preheat Oven and Prep Muffin Cups: Preheat your oven to 350°F (180°C) and line a muffin tin with paper liners. If you dont have a muffin tin, use any oven-safe tray you have!

Mix Wet Ingredients: Mash the banana until smooth and no visible chunks. Add in the egg, yogurt and oil.

Mix Dry Ingredients: Then mix in the baking powder and the oats (make sure the oats are more of a flour consistency before mixing in to the wet ingredients for a better texture muffin.)

Add Optional Mix-Ins: If desired, fold in chocolate chips or fruit into the batter for extra flavor and texture.

Fill Muffin Cups: Spoon the batter into the prepared muffin cups, filling each cup about 1/2 full. You can TOP with the option add-ins like fruit as well!

Bake: Place the muffins in the preheated oven and bake for 20-30+ minutes, or until the tops are golden brown and a toothpick inserted into the center comes out clean. I find you really have to test these out with your oven the first time, as mine take around 30 minutes to be fully cooked.

Cool and Enjoy: Remove the muffins from the oven and let them cool on the tray for a few minutes. Enjoy warm or at room temperature!
Tips and Variations:
- For a gluten-free option, use certified gluten-free rolled oats.
- Experiment with different mix-ins such as chopped nuts, shredded coconut, or dried cranberries. (Choose whatever is safest for your child, as nuts and seeds can be choking hazards for small children). We use cut up fruit pieces or mini chocolate chips.
- I do not recommend saving these for a few days, as they’re best fresh same day.
